But I have one question … how we can add ios Simulator for a flutter project?

I have that same issue. When I create a Flutter project, there are only Android and web simulators.
We have paused our iOS simulator rollouts for now. We’ll post an update when we are able to bring that back.

Thank you for the update. Could you clarify what limitations the iOS preview is currently facing, and if there are any ongoing efforts to address these issues?
